30 min prep time if meatballs are already made – Serves 8
This dish works well as an appetizer using smaller sized meatballs (3/4 – 1″ diameter) or a main dish with larger ones (1 1/2 – 2″ diameter). We included a meatball recipe below or you can purchase frozen from your favorite discount grocer.
2 lbs Meatballs, frozen
2 C Salsa
1 C Orange Marmalade
Arrange meatballs on a sheet pan and bake at 325 for 12-15 minutes to an internal temperature of 165.
In a sauce pan, combine salsa and marmalade. Whisk together until heated through.
Combine with meatballs in a serving dish or place in a crock pot on low. This dish holds well.
Meatball recipe
10 minutes prep time, 25 minutes cooking – serves 8-10
We make double or triple batches of this, use what we need for a meal and freeze the remainder for future use.
1 lb 80/20 ground beef
1 lb ground pork
1 egg
1/2 C breadcrumbs
1/3 C milk
1/2 C onion diced and sautéed until soft
¼ C parsley chopped
¼ C parmesan shredded
½ t garlic powder
1 t Italian Seasoning (see homemade recipe below)
salt and pepper to taste
Combine ingredients into a loose mixture. We like to test our seasoning level by frying a bite sized portion in a saute pan before baking the entire amount.
Lay parchment paper on a sheet tray to make cleanup easy and form into your preferred size ball. Consistent size is important for even cooking. An ice cream scoop of the correct size makes it easy to keep them all perfect.
Bake at 400 for 18-20 minutes to an internal temperature of 165.
Italian Seasoning
We make this in batches and keep in a shaker above the oven
- 2 T dried basil
- 2 T dried oregano
- 1 T dried rosemary
- 2 T dried parsley
- 1 T dried thyme
- 1 T red chili flakes
- 1 t garlic powder
