I’m pretty sure she stole this recipe from the food network but it’s a wonderful side dish with a fresh asian flair. Makes about 2 cups or 4-5 servings.
1 C Edamame
1/2 C Fresh Corn Kernels
1/4 C Red Bell Pepper, diced small
2 strips Applewood Smoked Bacon – cut into 1/4″ lardons (kitchen shears are perfect for this)
2 T toasted Sesame Oil
1/2 C Red Onion, finely diced
1 t Garlic, minced
Salt & Pepper to taste
In a large skillet saute onions and garlic in sesame oil over medium heat until softened (about 2 minutes). Add the bacon until fat is rendered and begins to crisp (about 5 minutes).
Add Edamame, Corn and Bell Peppers and stir for 2 to 3 minutes. Season with Salt & Pepper to taste and serve hot.
