Wet Ingredients:
2 C Sugar
2 C Pumpkin
1 C Vegetable Oil
4 Eggs
Mix wet ingredients together, then add
Dry Ingredients:
2 C Flour
2 t Baking Powder
1 t Baking Soda
1/2 t Cinnamon
1 C Coconut or nuts (optional)
Place in a 10×15 greased pan, Bake at 325 for 30 minutes. Let cool and spread cream cheese frosting.
Cream Cheese Frosting:
3 C 10x sugar
8 oz Cream Cheese (softened)
1/2 C Butter (softened)
1 t Vanilla or Maple syrup
Place all ingredients in a large bowl and mix thoroughly with a hand mixer. Start slow or you’ll have confectioner sugar everywhere.
