Raspberry Cobbler – Serves 8-10

This recipe is interesting as the water in the fruit compote boils away while baking leaving a crispy sugary top that is very satisfying.

Serve with Ice cream or Milk as you desire.

Batter Ingredients:

2 C Flour
1 C Sugar
1 C Milk
2 t Baking Powder
1/4 C Butter (melted)

Fruit Compote Ingredients:

2 C Fruit
1 C Boiling Water
1 C Sugar
1 T Butter

Combine batter ingredients and pour into an approximately 8×10 baking pan.

Stir together fruit compote ingredients (it will be thin or runny) and pour over the top.

Bake at 350 for 35-40 minutes.
